Want to know what to cook with the vegetables you get at harvest handouts? Look here to learn how to make a variety of yummy dishes. All of these foods include something we grow at our farm, and the rest are things you can find at your local grocery store or farmers market!

Quinoa Veggie Stir-Fry

Ingredients:

  1. Quinoa

  2. Beets

  3. Beet tops

  4. Zucchini

  5. Chickpeas

  6. Broccoli

  7. Sweet peppers

  8. Olive oil

  9. Salt & pepper

  10. Sauce of your choice​

  11. Whatever other vegetables you like!

Steps

  1. Boil beets for about 45 mins in a pot of water (faster option is to microwave for 5-10 mins)

  2. Cook quinoa according to package directions

  3. Chop up all the vegetables

  4. Sauté vegetables in olive oil for 10-15 mins

  5. Strain your beets, rinse under cool water and chop them up and put them with the rest of the vegetables

  6. Add in chickpeas and quinoa

  7. Serve with sauce (I like either pesto or tahini and lemon juice)
