Sun Pickling Recipe & Instructions

Watch these videos to learn how to sun pickle! Pick up the veggies you want to pickle (these videos focus on peppers), then sign up for a slot this Tuesday (9/29) to pick up your sun pickling kit from the F. H. King student farm (located in Eagle Heights community garden). These kits will include brine solution, grape leaves and pickling jars. While you’re there, feel free to take a look around the garden! To ensure social distancing, please make sure you stick to your chosen time slot, wear a mask, and maintain a 6 foot distance with anyone at the gardens.

What you'll Need:

  • Banana peppers or whatever veggie you plan to pickle (available at harvest handouts!)

  • Jalapeño (available at harvest handouts!)

  • 2 cloves Garlic

  • 1 slice Onion (or your preference)

Provided in activity package:

  • Jars and lids

  • Pickling solution or brine (enough does the jars provided)

  • Grape leaf

If you plant on pickling more, the solution recipe is based on your jar size. For the 1/2 pint jars we provided you, we used this solution:

  • -(2) 1/2 pint = 2 cups

  • -1 cup water

  • -1/2 cup vinegar

  • -1/2 tablespoon salt

  • -Then fill with water the rest of the way

If you are using different sized jars, try doing roughly this same math. Since there pickles are sun pickles and not preserved, this ratio matters for flavor not safety
